the reason the chat rooms arent open all day long is that they would require alot of maintenace and a HUGE server

those are just probably the main reasons im sure there are more

the chat rooms arent open all day cause apparently ud never be able to find who u were looking for to trade but i still think they should be open 12lunch-12night at least cuase im in eastern time and for me they stay open till 11 but dont open till 5 and i have to eat soon cause by that time in day i am hungry

They may not want to have a North American centered chat time

That is all very true, but im sure the chat room also costs money, and onloy a handful of members are premium so it doesnt exactly cover all the costs.
